Adai Avial is one of the most sought and treated as one of the South Indian delicacies! You can take my word, it is one of the heaviest breakfasts.2 Adais would keep you jumping and pumping! Similar to Dosa and Idly, you will have to keep the batter ready for Adai...Adai is known for its high protein value! You can definitely count avial also as one of the nutritious dishes as it is a composition of various boiled vegetables!
So, this is how we go about it...
Batter for Adai: (16 pieces)
Things you need -
1. Rice - Boiled Rice + Raw Rice (1 Cup - 200 grams)
2. Tur Dhal (100 grams) + Urud dhal (25 grams) + Chana Dhal (75 grams)
3. 12 Red Chillies
Method:
1. Soak 200 grams of Rice and dhal's with 12 red chillies in sufficient quantity of water so that it is immersed well for 3 Hours.
2. After 3 Hours, coarse grind it. Fine grinding should not be done.
3. Unlike Dosa/ Idly, you will have to refrigerate this immediately after grinding. Alternatively, if you are going to use it immediately, you can add onions or Carrot or Cabbage and salt to taste.
Things you need for Avial : (for 8 people)
1. Potatoes - 3-4
2. Carrots - 2
3. Green Beans - 100 grams
4. Broad Beans - 100 grams
5. Raw Banana - 1 Piece
6. Yellow Pumpkin - 1/4 kg
7. White Pumpkin - 1/4 kg
8. Green Peas - 50 grams
9. Chayote / Chow Chow (in tamil / hindi) - 1 piece
10. Sweet Potato - 1 Piece
11. Colocacia / Seppakezhangu (tamil) - 4-5 pieces
12. Jeera, Asafotedia, Coconut (1 Cup)
13. Green Chillies - 6
14. 6-8 Spoons of Coconut Oil
Method:
1. Cut the vegetables into long pieces (1 inch long)
2. Boil the vegetables with sufficient amount of salt
3. Grind Coconut, Green Chilly, Jeera and Asafotedia
4. Add the grinded mixture to boiled vegetables.
5. Mix this mixture finely and let this simmer well for 5-10 minutes
6. Add 6-8 spoons of edible Coconut oil and let the mustards splutter along with Curry leaves. You can add this to the boiled vegetables pan
So, there is an awesome South Indian Dish ready for your plates!!
